| (Janet Airis) BROWNIES (Using Your Favorite Mix) One 19.8-ounce package fudge brownie mix One-half cup vegetable oil Two large eggs One-fourth cup coffee or coffee liqueur One-half cups semisweet chocolate chips (about 9 ounces) One cup chopped pecans (optional) Preheat oven to 350 F. Butter 9x9x2-inch metal baking pan. Place brownie mix in bowl. Add oil, eggs and coffee; stir well until blended. Stir in chocolate chips and nuts. Transfer batter to prepared pan. Bake until slightly puffed and tester inserted into center comes out with some moist crumbs still attached, about 35 minutes. Cool brownies in pan on rack. Note: The pecans are especially good if you roast them (5-8 minutes, while the oven is preheating) before adding them to the batter. Be careful not to roast them too long or they will be bitter.
